    I picked up some chicken breasts from a local farm on Sunday. These things are HUGE.

    Anyway, I want to create my own thin but beautifully crisp coating. How do I do this and what should I add?

    The first thing to do is

    chuck away the breasts and get some thighs, which have the advantage of tasting of something.

    You could either coat them in a flour and spice mixture, or breadcrumb them. Either way you'll want to add garlic granules, celery salt, paprika and possibly cayenne.

    The deep fryer is your friend in this matter.

    it may well be my tastebud's friend but it will not be my heart 's friend. I intend to oven bake.

    Use panko breadcrumbs. Shallow fry in a pan.

    Oven bake, please.

    Then you can forget a crisp coating, I'm afraid.

    Oven baking fried chicken!
