I think there would be a clause in the contract stipulating that any pay-off he receives is dependent upon him not working elsewhere for the period covered by the pay-off

If he has actually been sacked then they cannot impose any restrictions of any sort as it is illegal.

There's a severance package to be negotiated and United can impose terms then (possibly if there isn't something written into his contract)

They will pay him his contract until he gets another job unless something else is negotiated between them... think about it, if you have to pay him the full severance package in effect he is still under your contract so you can say no new job....... didn't Conte have the same at chelsea
