I believe butter is classed as a healthy fat. Flour you need to swerve, carbs innit.

Spuds are carbs too, though. Mashed tayto gets you fat AND carbs, dumplings just carbs. Hmm?

I've always been profoundly 'meh' about mash. And I've had Joel Robuchon's.

I quite liked it really. For some reason I decided when I was kid I didn't like them.
