freelance on the side, and you want to hire an assistant to help with your freelancing, what are the tax implications? Can I just pay the dude straight into his bank account and let him deal with it?

I have to fill in a self-assessment every year.
Basically, is hiring someone gonna cost me money (other than what I pay the bloke)?

If it is a one-off then just chuck him/her cash in hand and the deal is complete.
If you are employing them then perhaps there may by NI implications, old fashioned stamps as such. It is probably up to them to declare it all the same.
How does it work for you when you do work for others?

You may be able to do something as it being an expense to your business. A clever accountant might be able to get you something back.

When I work for others they sometimes (not always) ask if I'm registered for VAT and that's basically it.

I think if I was set up as a limited company it would be even more beneficial. Apparently you can claim back on a ridiculous amount of ****.
