I've got an inch-and-a-half thick sirloin steak and a mahoosive field mushroom. There will be peas. There will be mashed potatoes. There will be red wine gravy.

Bring to the boil. Simmer for 16 - 18 minutes, depending on the size of your pieces. Drain and allow to steam for a few moments to dry. Pass through a ricer. Add salt, white pepper and butter. Around 25 pc of the weight of the spuds in butter. :-(
For true pommes puree the butter percentage would be nearer 40. But I'm not making pommes puree, I'm making mashed potato, see? That's why I didn't call it pommes puree.
