such was their size.

Concerned about burning the garlic butter, I clarified it before starting, added a lot of crushed garlic and allowed it to infuse for 30 minutes, then strained it out. Worked a treat.

It simply had to have chips with it, naturally.

I have my meat extravanganza this weekend.

To make the burgers I have ordered 3 kg of brisket to be coarsely minced with an additional 500g of fat. This, I hope, should bring the beef up to about 30 pc fat.

I saw an intriguing recipe for burgers by John Torode which adds oyster sauce to the mix. I'm going to try this.

There's plenty for any vegetarians. There will be a green salad, a coleslaw and some burger buns.
