But do we have any Mustang experts here?

Now I would love an old one but too much hassle imo. But will see if the right deal comes along.
The late 70s to 2004 model is not something that interests me

But I like the model from 2005-2014. I also like the latest one but it's out of my price range.

TheyOld wons, even worse.
I can see some pretty huge garage bills on the horizon and the authorities are going to completely rinse you on tax.

absence of handling and only about 250bhp from a 4.2 V8.

Just pay a bit more for a German car and you'll be rewarded with a far greater driving experience and will face less petrol/repair bills.
