Given that one sits at a bar watching the food being prepared in front of one, I can attest that the food preparation area is like an operating theatre.

The lamb's kidneys are not to be sniffed at, and the suckling pig is a thing od great joy.

We haven't even discussed the specials today; these include lobsters, langoustines, tellines (!), razor clams and hake :cloud9:
