View Full Version : tonight i'm doing.prawn tempura fondue :eating:

got some lovely big uncooked deshelled prawns..just put out bowl of iced fizzy water and choice of panko ( thx sir c for reminding of panko ) or corn flour.

got some salad, pickles, chillis..and do some little boiled potato cubes to sometimes dip in

job done..guess ill do bowl of rice and some sauces n dips

jap fondue :-) wd me imo ..maybe i should have checked matey and his missus eats prawns ? **** ..sure it be ok

It's a winner.

I added some parmesan to my panko on a schnitzel last week. Mistake. To much umami.

could be useful..though it will mean me sneezing as my battered nose explodes blowing boiling oil on my guests :-)..maybe i dont need wasabi .. :) i'll do my nice mix of soy sauce, chilli oil, fine chopped thai chilli and fine chopped garlic then left for couple of hours

snin's basically having fried prawns, chips and aioli for dinner, isn't he? He wants to f**k this whole tempura/fondue **** out the window imo.

but other times a nice red wine and veg broth is the safer option but not so much fun :-) though it will mean ill need to clean the windows on the inside on weekend and really wipe about to clear the fat film :-)

a rack above, I shall place two well-seasoned and pricked duck legs. I shall put them in the oven. Then I shall go out for a run. When I return, I shall shower and whatnot and, by the time I'm done, I will have beautifully crispy roasted duck legs and delicious roast potatoes.

Amazing how just the slightest hint of citrus can stop a cream sauce being heavy.

I fear for your roast potatoes sans parboiling.

Furthermore - to place duck in the oven unconfined is an act of madness or stupidity. You will need to get the oven cleaning man out tomorrow.

I am making cheeseburgers and chips. I have a mixture of sirloin and shin to put through the mincer.

basted by hot fat is rather marvellous.

As to the duck, what are you going to do? You can't get a crispy skin with a covered duck.

Placing the milk in a pan, I turned the gas on high whilst chopping the onion and adding the peppercorns and cloves. As the milk came up to a simmer and was ready to accept the fish, the thought struck me that I had missed something out. So I grabbed a lemon, chopped it in half and squeezed all the juice in.

Instant cheese. :hehe:

I parboil them and place them in a roasting tin under a rack, with the duck legs on top. The roasting tin keeps some of the grease under control.

Sadly, they are to go and live in my favourite son's fish tank.

Personally I'd have put them in a sandwich but I'll probably end up having to bring them breakfast in bed
