Plenty of finely sliced shallot. Red chilli. Garlic. Fry the pork mince and chuck away the watery nonsense, Put to one side. Fry half the shallot and half the chilli for 5 minutes. Chuck the mince back in, then the garlic, then plenty lime juice and nam pla. At the last minute, the raw shallot and chilli and a big handful of coriander.

7 minutes, done.

Iceberg lettuce is probably best.
