Raymond Blanc's cassoulet recipe, mon brave! A thing of rare joy and beauty. Who could believe that most of a day spent confit-ing duck legs, soaking beans, chopping up pork rind and constantly pushing the crust down into the beany gloop could result in such a wonderful dish? Honestly. Amazing.

Weirdly, though, my mother would buy fish paste and meat paste and put them in sandwiches. This despite the fact they were clearly cat food. :shrug:
