View Full Version : I picked up some chicken breasts from a local farm on Sunday. These things are HUGE.
Anyway, I want to create my own thin but beautifully crisp coating. How do I do this and what should I add?

chuck away the breasts and get some thighs, which have the advantage of tasting of something.
You could either coat them in a flour and spice mixture, or breadcrumb them. Either way you'll want to add garlic granules, celery salt, paprika and possibly cayenne.
The deep fryer is your friend in this matter.
