I don't think it was anything to do with surrender monkeys, but it was definitely about the cheese eating.

I also find it best not to argue needlessly with the waiters before they've brought any of the cheese and/or other accouterments forth from the kitchen.

Only cheese sold prior to 60 days is required to be pasteurized. Cheese aged longer has no such requirement.

Everything is 'farm-to-table', or 'whole animal' or 'sustainability'. Everyone is curing their meats in house, making their own cheeses, etc.

Frankly, I'm a bit bored by the current climate of dining these days. tbh, I really don't care where the raw ingredients come from so stop putting the farm(s) on the menu. It means nothing to me.
