I don't think the food trendies have killed it off completely.

Although they seem to have killed off knives, forks and plates at the fashionable pizza place in Neals Yard http://www.awimb.com/images/smiley_icons/ohwell.gif

Not to buttery or too garlicky.

Too many places not putting enough care into it...

Pecorino, parmesan, pancetta, eggs, pepper, nutmeg, salt.

That's it. Parsley to garnish if you're cooking for a bird, I suppose.

Perhaps some Worcester sauce, tarragon and pickled onions?

It's made with guanciale, mate. If you're going for authenticity, you should make an effort.

There was one where they struggled to skin and meuniere a sole. Professional chefs. Couldn't cook a dover sole.

I despaired, right there.

Seriously, though, the woman is both northern and American - it's a combination that offers shocks to the system of delicate, refined types like us.

There were 8 of us and the manager convinced us that we wouldn't regret is as a starter with large Greek olives and dressing.

We loved it so much that we asked for seconds.

Its made with raw grated beetroot, you should try it.

I am sure you have been to Hughenden, famous for the house of the Victorian Prime minister Benjamin Disraeli - we then had lunch at the 10th century George and Dragon at West Wycombe, I love that place.

Next week is at The Sun in Highmoor
