One of the reasons that I started brewing my own beer is that I wanted to know what was going into my drink.

which means to store. Lager yeast can work at near freezing temperatures and so it can preserve the beer over a long winter and be ready to drink in the spring.

Bitters or ales will only last about 2-3 months before they go off. Lagers will last up to a couple of years.

The "lager" you have probably drank will not have been produced that way and will have been artificially carbonated rather than the natural carbonation
