View Full Version : I know this may sound ungrateful, but when you go to someone's house for dinner and it's roast

chicken, doesn't your heart sink just a tiny bit?

I mean roast chicken's fine, but y'know? It's about as 'meh' as dinner gets.

Plus, it represents very little effort, really. Why bother inviting me around if you're not going to put some effort in beyond shoving something in the oven and waiting for it to go brown?

I'm being churlish, aren't I? :-(

but you'll find people who don't like lamb of the beef is to rare for their liking.

decent roasties, parsnips, good gravy and yorkshire puddings (sod just having them with beef)

I would of course prefer beef or pork as the meat part though

it? Feeding 4 people with one chicken is f**king mean.

There.

If not, then they just don't like you very much, I'm afraid.

Agree with you about Yorkshires. They're too good only to have with beef. Although I must admit I was faintly scandalised the first time I was presented with them in a non-beef context.

And it was horrible. We have a saying when veg is grossly overcooked 'Oh dear you have Brenda'd the veg again'

Sister in LAw leaves her house in the cotswolds to come to Essex and says 'tell Mum to put the veg on' shudder.

the inner cavity stuffed with lemon and rosemary..lots of things can be done to make it a tidy tasty bird imo

If care was taken with the quality of the ingredients, the preparation and the cooking of same, I would be delighted with someone's chickens.

If you want Michelin-starred dining, I'm afraid you'll have to write a large cheque to M. Roux or Mr Blumenthal.

Maybe something with a sauce? A really good stew? A curry? A nice piece of fish, even?

I'm not asking for cordon bleu, just something that shows a bit of care.

Or taking care to roast a duck properly is different to doing the same with a chicken?

No. You must accept that you have made a balls of this one and move on.

English. Each week I try a different theme, but other than the skin there is little one can do to help the chicken too much. The medium of flavour delivery can only really be the gravy.

A great steaming hunk of oozing, bleeding flesh is a wonderful thing.

Some bits of pale, bland, insipid avian just won't do, I'm afraid.

And I put pancetta on the breast then remove near the end to brown the skin. The pancetta makes a nice nibble before dinner

Now with partridge or pheasant, yes. But not with chicken.

And there are cloves in it as well. Stuck in a wee onion.
