View Full Version : I learnt on the weekend that you can't make triple-cooked chips with Spanish potatoes

because the starch content is too high. Or too low. One or the other. I wasn't hugely interested in the conversation tbh. Nor I doubt is anyone in this post :-(

There really is no need.

Where did you get Spanish potatoes?

Normally.

Salt, a dollop of something piquant and unctuous and you're away. Leave well enough alone.

Their Porterhouse was little short of magnificent, though. A fine piece of meat.

Perhaps this fellow is simply better at steak than at chips. There's no shame in it, we all have limitations.

Marve, for example, loves to go on about the technical aspects of aircraft departures from regional airports despite the fact that he has only limited knowledge of the matter.

However, I would say that - in context - the big, floppy chip shop chip with heart-stopping quantities of salt and soaked in pickled onion vinegar is the equal or any twice-cooked effort.

Remember what dear old Willie Yeats had to say:

'I made my song a coat
Covered with embroideries
Out of old mythologies
From heel to throat;
But the fools caught it.
And wore it in the world's eyes as though they'd wrought it.
Song, let them take it.
For there's more enterprise in walking naked."

Both varieties are fine ways to treat the spud.

I'm starving now :-(

We feel good, even if the fainting is a little embarrassing on occasion.
