Lots of those 70s classics are simply perfect. Chicken Kiev, Chicken a la King, Veal parmegiana, these things are all wonderful.

I've never had the courage to try and cook a proper Chicken Kiev. Have you? I remember it being the first thing I ever ate in a proper restaurant and thinking it was immeasurably sophisticated and wonderful. I'm not sure I was wrong.

It really is awfully tricky to create the pocket and keep the garlic butter sealed therein whilst deep frying.

There is nothing to whet the appetite more effectively than a good pile of chips. Stacking them up just means you get fewer and they're probably cold.
