I had this with someone who took me out for lunch to a vegan restaurant. Everything was inherently bland and - unforgivably - underseasoned. And I had to order vegan wine by the glass while they drank water. Terrible business.

Make cauliflower rice. Then eat curry with it.

Oh, you can make a sort of cauliflower cheese, but you need to use chickpea flour for the roux.

More positively, celeriac dauphinoise is very nice indeed.
