I have never watched the first series.. but you do need to watch series 2 to be able to watch series 3 imo

Yes it is fine to watch from series 2 - the first series sets up a couple of characters who are key to series 3 and introduces the main AC12 team but you definitely need to view series 2 before watching 3.
