Why don't vegans embrace their veganism and eat their foods without trying to make it look like an alternative to it's meat equivalent. For a start, can a non-minced meat product encased actually be be called a sausage?

Indeed. Apart from anything else, doing so is a tacit admission that tgeir food is inherently inferior to the meat-based alternative.
